KENZO FW 2011-12 / SAVOURY SALAD IN A BLACK BREAD BASKET
For 4 people. 4 blocks of black bread, 4 eggs, 4 purple potatoes, 300g (10.5 oz) cherry tomatoes, extra-virgin olive oil, salt, pepper.

Take a block of black bread (alternatively there are many ready-made mixtures ​​to prepare it fast in the size you prefer) and cut a rectangle the size of 15x9cm (6×3.5 in). Peel the potatoes, cut them into cubes, place them in a baking tray with enough extra-virgin olive oil, rosemary, and bake at 180°C (356F) for about 30 minutes (cooking time depends on the quality of the potatoes). When the potatoes are cooked, in a heavy-bottomed saucepan put a tablespoon of extra-virgin olive oil. Warm it gently over medium heat and break an egg into the pan. Repeat the same action carefully, adding as many eggs as you want. Alternatively take a pan, large enough to contain more than one egg (but be careful the eggs do not touch each other, to avoid losing their shape). Cook for a minute, and finally, take the eggs with a spatula, being careful not to break them. Lay them carefully, one at a time, into our bread basket. Add the potatoes, fresh cherry tomatoes cut in half and season with salt and pepper.


KENZO AI 2011-12 / MACEDONIA SALATA IN PIATTO DI PANE NERO
Per 4 persone. 4 blocchi di pane nero, 4 uova, 4 patate viola, 300g di pomodorini, olio extravergine d’oliva, sale e pepe.

Prendete del pane nero a blocchi (in alternativa esistono molti composti già pronti per prepararlo abbastanza velocemente nella teglia della dimensione che preferite) e ricavatene un rettangolo della dimensione di cm 15x9.
Mondate le patate, tagliatele a cubetti, mettetele in una teglia con sufficiente olio extravergine d’oliva, rosmarino, e infornate a 180° per circa 30 minuti (la cottura dipende dalla qualità delle patate).
Quando la cottura delle patate è ultimata, prendete un pentolino a fondo pesante e metteteci un cucchiaio di olio extravergine d’oliva. Scaldatelo a fuoco medio e rompete delicatamente un uovo nel tegamino. L’operazione è da ripetere con cura per la quantità di uova che desiderate, in alternativa prendete una pentola abbastanza grande da contenerne più di una (ma fate in modo che le uova non si tocchino tra loro per evitare che si perda la forma). Cuocete per un minuto e, infine, prendete le uova con una spatola facendo attenzione a non romperle. Adagiatele con cura, una alla volta, all’interno del nostro piatto di pane. Aggiungete le patate, i pomodorini freschi tagliati a metà e regolate di sale e pepe.



BURBERRY PRORSUM FW 2011-12 / SPAGHETTI IN SQUID INK SAUCE WITH ORANGE-MARINATED SHRIMPS
For 4 people. 400g (14 oz) spaghetti in squid ink sauce, 5 organic oranges, 16 shelled shrimps, ½ onion, 2 shallots, extra-virgin olive oil, salt and pepper.

Put the shelled shrimps in a pot with lightly salted water and half an onion and boil them for 3 minutes. Squeeze an orange and set the juice aside. In a large skillet brown the two finely chopped shallots with a little extra-virgin olive oil. After a minute, add the orange juice and cook it over high heat to dry it completely.  Then add the drained shrimps to the pan and let them cook a little. While bringing the water to a boil for the pasta, cut the other  oranges a little above the half point (we will use them as containers), removing the pulp and drying them well.  Cook the spaghetti “al dente”, drain and put in our pan with the shrimps. Sauté them a little. Place carefully the spaghetti into the empty orange halves and grate a little orange peel on top.  Keep the orange pulp for the Jil Sander fruit recipe. (see below)

 
BURBERRY PRORSUM AI 2011-12 / SPAGHETTI AL NERO DI SEPPIA CON GAMBERETTI MARINATI ALL’ARANCIA
Per 4 persone. 400 g di spaghetti al nero di seppia, 5 arance biologiche, 16 gamberi rossi sgusciati, ½  cipolla, 2 scalogni, olio extravergine d’oliva, sale e pepe.

Mettete a bollire per 3 minuti i gamberi sgusciati in una pentola con acqua leggermente salata e mezza cipolla. Spremete una arancia e tenete da parte il succo. In una padella ampia fate appassire i due scalogni finemente tritati con un po’ di olio extravergine d’oliva. Aggiungete dopo un minuto il succo d’arancia e, a fiamma viva, fate asciugare quasi completamente.  Aggiungete anche i gamberi scolati e lasciateli insaporire in padella. Mentre portate l’acqua per la pasta ad ebollizione, tagliate poco più in alto della metà le altre arance (che useremo come piatti), curandovi di toglierne la polpa e di asciugarle bene.  Cuocete gli spaghetti al dente, scolateli e metteteli nella nostra pentola con i gamberi, spadellandoli un po’. Posizionate con attenzione gli spaghetti all’interno dell’agrume e grattugiate un po’ di scorza d’arancia sopra.  La polpa di arancia tenetela da parte per la frutta di Jil Sander.



DOLCE & GABBANA FW 2011-12 / POLENTA IN PARMESAN CHEESE WAFERS WITH BABY SQUID IN BLACK INK SAUCE
For 4 people.
For the wafers: 200g (7 oz) grated Parmesan cheese.
To make the polenta: 250g (8.8 oz) cornflour, salt.
To prepare the squid: 600g (21 oz) baby squid, 4g (0.14 oz) squid ink, a glass of white wine, parsley, a clove of garlic, extra-virgin olive oil, salt and pepper.

To make the wafers: roll out the baking paper on the baking tray and shape 8 wheels of grated Parmesan cheese, with a diameter of 20cm (8 in). Bake at 150°C (300F) for a few minutes until the cheese is melted. Take out from the oven and, in order to shape a sort of soup plate, take 4 discs and place them on 4 upside down cups. Place a weight over them, such as another upside down cup, to avoid having to keep the discs in your hand. The other 4 discs should be shaped as dinner plates, on which we will put the soup plates filled with polenta. Let stand for 20 minutes and then take them off the baking paper. The end result will be: 4 flat wafers and four deep wafers.
To prepare the polenta: put 1 litre of salted water in a pot and, when it begins to boil, pour the cornflour using a sieve, to prevent any lumps from forming. Stir frequently with a whisk for 45 minutes (alternatively you can buy ready-made polenta, it’s way faster to make). To prepare the baby squid: clean them by removing the bone and the giblets and set the vesicles with the black ink aside (alternatively buy them already cleaned and buy the black ink separately). Put extra-virgin olive oil in a skillet over medium heat and add the garlic (peeled and cut in half) and the baby squid. Cook for a minute, add the white wine and, once evaporated, add the parsley and the squid ink. Cover with a lid, stirring frequently and finish cooking over low heat for 10 minutes, then turn off the oven. Handle the Parmesan cheese wafers with care. Here we have two different versions: one dinner plate and one soup plate, but you can play with the shapes according to your mood (in the picture you’ll see there are 3 layers of wafers).  Then gently add the polenta and the squid in black ink sauce.

 
DOLCE & GABBANA AI 2011-12 / POLENTA IN CIALDA DI FORMAGGIO GRANA CON SEPPIE AL NERO
Per 4 persone.
Per le cialde: 200g di formaggio grana grattugiato.
Per la polenta: 250g di farina di mais, sale grosso.
Per le seppie: 600g di seppioline, 4g di nero di seppia, un bicchiere di vino bianco, prezzemolo, uno spicchio d’aglio, olio extravergine d’oliva, sale e pepe.

Le cialde: stendete la carta da forno sul piatto da forno e formate 8 cerchi di formaggio grattugiato, del diametro di 20cm. Infornate per pochi minuti a 150° fino a che il formaggio non risulta sciolto. Togliete dal forno e, per creare una specie di piatto fondo, prendete 4 dischi e posizionateli rispettivamente su 4 coppette rovesciate appoggiandoci sopra un peso (ad esempio un’altra coppetta rovesciata per evitare di dover tenere i dischi con le mani). Gli altri 4 dischi sono da usare come piatti piani, per appoggiarci sopra quelli che andremo successivamente a riempire di polenta. Fate riposare per 20 minuti e poi staccateli tutti dalla carta da forno. Il risultato finale sarà dunque: 4 cialde piane e 4 cialde fonde.

La polenta: mettete 1litro d’acqua salata in una pentola e, quando comincerà a bollire, versate la farina di mais aiutandovi con un setaccio per evitare che si formino grumi. Mescolate frequentemente con una frusta per 45 minuti (in alternativa acquistate la polenta istantanea, i tempi si accorceranno di molto).

Le seppie: pulitele privandole dell’osso e delle interiora e tenete da parte le vescichette con il nero (in alternativa prendetele già pulite e acquistate il nero a parte).

Mettete dell’olio extravergine d’oliva in una padella a fuoco medio e aggiungete l’aglio (sbucciato e tagliato a metà) e le seppioline. Fate cuocere per un minuto, aggiungete il bicchiere di vino bianco e, quando sarà evaporato, mettete il prezzemolo e il nero di seppia. Coprite con il coperchio avendo cura di mescolare ripetutamente e ultimate la cottura a fuoco basso per 10 minuti, dopodiché spegnete.

Posizionate con cura le cialde di formaggio grana, qui ne abbiamo create due versioni, una che funge da piatto piano e l’altra da piatto fondo, ma potete giocare con le forme in base al vostro umore (nella foto vedete infatti 3 strati).  Aggiungete poi con delicatezza la polenta e le seppie al nero.



JIL SANDER FW 2011-12 / FRUIT INSIDE A CHOCOLATE TRUNK
For 4 people. 200g (7 oz) extra dark chocolate, 4 cups berries, orange pulp, candied cherries, sugar silver beads.

Melt the chocolate in a bain-marie, using the following technique: boil water in a pot.   Then place a smaller pot into the large one (it should not touch the water). Then put the chocolate into the smaller pot, so that it melts through the water steam coming from the larger pot.  If chocolate cools too much, just put the pot again on the heat. Prepare acetate sheet or parchment paper on a cold and smooth surface (such as marble).  Cut the acetate sheet into 4 strips of 12cm (4.5 in) wide and 27cm (10.5 in) long. Then pour the melted chocolate over them, spreading it with a spatula (note: the strip of chocolate should be approximately 9cm wide, the remaining surface must remain clean, so you can take off the strips with your hands).  When the chocolate becomes a little hard, but it’s still soft enough, take each single strip and start shaping cylinders (which will be our containers for fruit) using special molds that you can buy in kitchen shops (such as those used to make tartar). Be careful to join the beginning and the end of the chocolate on the strip to avoid leaving gaps. Put the strips in the refrigerator to cool for an hour and then take them out. Now it’s the most delicate moment: you have to remove the chocolate from the paper.  I suggest you keep some melted chocolate and a silicone brush at hand.  Do not panic if something breaks while separating the paper from the chocolate. You can use some more melted chocolate and the brush to fix it quickly. After removing all the paper, brush the melted chocolate all over the trunk and garnish with candied cherries halves and silver beads. To create the bottom of the trunk, use the following technique. Before, make sure you measure the diameter of the trunk you just made. Melt the chocolate and make circles of the right size, let them cool, and finally, take them off the paper. Note that melted chocolate will act like glue: to attach the bottom part you just need to add it to the trunk and brush it with melted chocolate to join everything together.  Once our chocolate container is ready, fill it with blackberries and raspberries previously washed and the orange pulp left over by the preparation of spaghetti.


JIL SANDER AI 2011-12 / FRUTTA IN TRONCO DI CIOCCOLATA
Per 4 persone. 200g di cioccolato fondente extra, 4 vaschette di frutti di bosco, polpa d’arancia, ciliegie candite, perline argentate di zucchero.

Fate fondere il cioccolato a bagnomaria usando questa tecnica: portate ad ebollizione dell’acqua in un pentolino. Successivamente appoggiate sopra a questo un altro pentolino (senza che tocchi l’acqua)  e metteteci il nostro cioccolato, facendo in modo che si sciolga attraverso il vapore acqueo del pentolino sotto. Se il cioccolato dovesse raffreddarsi troppo, è sufficiente rimettere i contenitori sul fuoco.
Preparate un foglio di acetato o carta da forno su una superficie fredda e liscia (come il marmo ad esempio). Preparate 4 strisce di acetato dell’altezza di 12cm, lunghe 27cm e versate il cioccolato fuso aiutandovi a stenderlo con una spatola (fate attenzione: stendete il cioccolato per circa 9cm di altezza, la parte pulita ci serve per poter prendere le strisce con le mani). Quando sarà leggermente indurito, ma avrà mantenuto ancora una leggera morbidezza, prendete ogni singola striscia e iniziate a formare i cilindri  (che rappresentano i nostri contenitori per la frutta) appoggiandoli su delle formine apposite che si acquistano nei negozi di cucina (ad esempio quelle che si usano per creare le tartare) e facendo attenzione a unire l’inizio e la fine del cioccolato sulla striscia per evitare di lasciare spazi. Mettete le strisce a raffreddare in frigorifero per un’ora e poi togliete dal frigo. Ora il momento più delicato: dovete staccare la carta dalla cioccolata. Vi consiglio di tenere a portata di mano del cioccolato fuso e un pennello di silicone. Non spaventatevi se qualcosa si rompe separando i due elementi, con il nuovo cioccolato fuso e il pennello possiamo recuperare velocemente. Una volta tolta la carta spennellate tutto il tronco con il cioccolato fuso, e guarnite con ciliegine candite tagliate a metà e perline d’argento. Per creare il fondo di cioccolata procedete sempre con la stessa tecnica, ma misurando per prima cosa il diametro del tronco che abbiamo ottenuto. Fondete quindi il cioccolato, create dei cerchi dalle giuste dimensioni, fate raffreddare e, infine, staccateli dalla carta. Sappiate che il cioccolato fuso è come una colla quindi, per attaccare il fondo, non serve fare altro che unirlo al tronco spennellando le giunture con il cioccolato fuso. Una volta pronto il nostro contenitore di cioccolata, riempite con more e lamponi precedentemente puliti e con la polpa d’arancia avanzata dalla preparazione degli spaghetti.



LANVIN FW 2011-12 / VODKA, CHAMPAGNE AND POMEGRANATE COCKTAIL
For 4 people. 4 large pomegranates, vodka and champagne.

Take 4 large pomegranates, cut them a little above the half point. Carefully remove the pulp using a spoon. Clean them very well on the inside and put the pulp into a bowl, carefully removing the peel. Put all the seeds in a blender and mix together to obtain a juice. In a jug, pour a quart of champagne, 200 ml (6.7 fl oz) of vodka (even more if you like) and add the pomegranate juice. Use these beautiful fruits instead of glasses and cut a hole for a straw with a sharp knife. The jug will stay in the middle of the table, ready to help you fill your “glasses” as soon as they are empty.


LANVIN AI 2011-12  / COCKTAIL DI VODKA, CHAMPAGNE E MELOGRANO
Per 4 persone. 4 melograni grandi, vodka, champagne.

Prendete 4 melograni grandi, tagliateli poco più in alto della metà e svuotateli con cura dalla polpa, aiutandovi con un cucchiaio. Ripulite bene l’interno e mettete la polpa in un recipiente rimuovendo con cura le pellicine. Mettete tutti i semi in un frullatore e centrifugate fino ad ottenere un succo. In una caraffa versate un litro di champagne, 200 ml di vodka (esagerate se preferite) e aggiungete il succo di melograno. Usate questi bellissimi frutti al posto dei bicchieri e, con un coltellino appuntino, create lo spazio per la cannuccia. La caraffa rimarrà al centro della tavola pronta a riempire i vostri “bicchieri” appena saranno vuoti.

I loved this! Looks like a lot of work went into this, and I laughed out loud at how uncanny some of the pairings are! Not to mention that every single food you picked is unusually beautiful and delicious-looking! The polenta in the cheese wafer looks amazing. I never knew people ate squid ink - so cool.
